Four Wheelin'

Took Boy's new ATV out for a spin on Sunday. We went out west and found a bunch of dirt roads through a development area that were all muddy from the melted snow. It got a bit scary, especially went we found a straight path and were able to get over 60mph - we were flying! Titan wore himself out chasing us, returned to basecamp (truck), and puked up his breakfast and an apple he gobbled up outside our house. He did get to sit between my legs and ride around with us for a bit.

Mud flew at us left and right. Boy got some in his mouth, and I guess it tastes about as good as you would expect.

I think Titan enjoys riding in the back of the truck, but maybe he needs some doggy goggles so his eyes don't dry up from the wind.

Pooped. Just in time for me to enjoy the Bears game, and see Cutler break his thumb... UGH!

Steak and Avocado Salad

For dinner last night, I made a steak salad with sliced up avocados (gotta incorporate the good fats to keep you full). I ate that with a side of sweet potato fries that I fried up with olive oil. Easy, fast meal.

I brought the same thing for lunch today, and also some pineapple chunks. I'm really glad I ate bacon and eggs this morning. I walked by the conference room where we are about to have training in 15 minutes, and there are chick-fil-a breakfast burritos waiting to be eaten. MUST RESIST!


Nori Rolls

I have been craving some Asian food goodness in my life, so I looked up a few Paleo-approved recipes. This week, I made nori rolls (inspiration found here) with cauliflower 'rice', veggies, and steak. Coconut aminos is a great substitute for soy sauce (it smells a bit weird to me, but tastes generally the same).

I'm glad my mom got me this wooden roller, it sure came in handy! Here are the veggies (cucumber, carrots, spinach) lined up with some strips of marinated steak (S&P, coco aminos) on a bed of cauliflower f'rice.

The cauliflower f'rice smells a bit funny, but it has the texture of rice and is more-or-less tasteless. Overall, this dish was a great success!



This week, I started back up at CrossFit again. Let me tell ya, I am one happy camper. It feels so good to be back in the gym doing some hardcore workouts and sweating my butt off. With that, I started my CrossFit/Paleo/Whole30 diet again. This time, I am not going to be so strict. I'm going to try and stick to it as much as I can, but I will allow some cheating. That way I am not shoving McChickens and chocolate and bread down my throat for a week straight.

I forgot my healthy lunch at home (hate when this happens), so I went to Smashburger. I really love this joint. I ordered a custom burger without the bun, but I got a side of sweet potato fries. Don't think these are legal since I'm sure they were fried in vegetable oil, but I splurged. SO GOOD!

I have a bunch of Paleo-approved recipes gathered up, and I'm really excited to test them out over the next few weeks. I'll be sure (ok, I'll try) to take pictures and share!
